Phew! I am looking out the window at the gray sky. The weather is damp and cold. Right now, I am visiting Denmark, my home country, and there is somewhat of a temperature contrast here compared to the sunny warmth of the Philippines. So a warming soup is just right. . . .

Finally! Creative Vegan Cooking is getting a new home – it's moving to wordpress. Blogging on wordpress has been my dream, and now it's soon a reality! Lately, I have been experimenting a lot with recipes containing vegan yoghurt, as we have started making our own soy yoghurt (I will share how sometime soon). It is so exciting to cook with yoghurt, and it makes recipes more 'dairy like' if you can say that. I already had much success with my ranch dressing, so now, of course, I had to try tzatziki, a greek yoghurt dip with garlic and cucumber.

Why not bake some bread today? These whole wheat bread squares are some of my favorite bread. Even though they are 100% whole wheat and have a rustic, nutty, deep flavor, they are still soft and fluffy (when freshly baked). They fill you up good and are perfect for a satisfying dinner sandwich. And because they are so thin, they are relatively quick to make.

Normally, I like to make complicated food – yes, that's me. But life sometimes is too complicated for complicated food. I think we all know that. SO, this easy vegetable rice dish almost takes care of itself. With the beloved combo of carrots and peas, and whole grain rice to fill up stomachs, this dish is simple and inexpensive enough to make for a crowd of hungry mouths.
