     These baked potato wedges can easily satisfy your cravings for french fries, and they have only little more than one fourth the calories! Compare the 140 calories for a serving (174 g.) of these baked potatoes with the 543 calories for 174 g. of french fries! And the well balanced herb flavor of these baked potatoes make them even better than french fries (try and see for yourself!). So you get a double advantage!
     If you are quick, you can make these in only one hour. The secret is to parboil the potatoes before baking them. Normally baking potatoes takes a long time, but if you bring them to a rolling boil first, and then drain and season them, they bake in much less time!
     Now, if you do not want the herb flavor, you can just omit the herbs for plain potato wedges with only salt. You can also experiment with other flavors. And you can . . . eat these for lunch! Let's stop talking and let's eat!


Herbed Baked Potato Wedges

Yields: 4 small servings
Total time: 1 hr.
Baking time: 45 min.

Ingredients

1 1/2 lb. potatoes (8 medium-small), peeled and cut in wedges

2 tsp. oil
3/4 tsp. salt
1 tsp. onion powder
1/2 tsp. dried basil
1/8 tsp. dried rosemary
1/8 tsp. dried thyme
1 dash cayenne, optional

Instructions

1. Bring potato wedges and water to a rolling boil. Remove from heat and drain well.
2. Mix remaining ingredients and let sit till potatoes are ready.
3. Toss herbed oil with potatoes on baking sheet.
4. Bake at 400° F for 45 min. or until potatoes are tender, stirring frequently.
5. Serve warm.
