Baked Banana Crisp

Finally! Creative Vegan Cooking is getting a new home – it's moving to wordpress. Blogging on wordpress has been my dream, and now it's soon a reality! I hope that explains why the posts have been a little sporadic lately – and perhaps will be the next few days. Please bear with me while waiting expectantly for the great day of the unveiling, coming soon!
So in today's post, I'm going to share an easy, energy-packed breakfast prepared fall style with a new twist – Banana Crumble! Crumbles and crisps are cozy for chilly fall days – just think of apple crisp – but so is baked banana, and here they are, both combined into one. If you are not a fan of baked bananas (which are super sweet, creamy, delicious, and comforting, by the way) I have included instructions for different praparation methods – but I do encourage you to try baked bananas if you have not already! . . . And if you have tried, do you like it? Shout out your opinion in the comments!

Baked Banana Crisp

This crisp is delicious both as a dessert and breakfast.
Yields: 8 dessert servings or 4 breakfast servings
Preparation time: 20 min.

Total time: 40 min.

Ingredients

8 bananas, split lengthwise

For the Topping:
2 c. quick oats
1 c. whole wheat flour
1/2 c. desiccated coconut
1/4 to 1/2 c. sugar
1 pinch salt
6 Tbsp. oil
2 to 3 Tbsp. water

Instructions

1. Place bananas cut side up on a baking sheet.
2. Mix all ingredients for topping and sprinkle over bananas.
3. Broil in bottom of oven about 20 min. Topping should be crisp and brown on surface and bananas baked. If you prefer less baked bananas, place baking sheet in middle of oven and broil till topping is golden. If you prefer unbaked bananas, try fresh bananas with toasted topping (toast topping as for crisp, stirring regularly). Watch carefully, as crisp can easily burn on broil. Crisp may be golden after shorter time than 30 min. in your oven.
4. Serve immediately while still warm. Do not store.

Scripture of the Day

Romans 3:23-24
"For all have sinned, and come short of the glory of God; Being justified freely by his grace through the redemption that is in Christ Jesus."
