Vegan Tzatziki Dressing


     Lately, I have been experimenting a lot with recipes containing vegan yoghurt, as we have started making our own soy yoghurt (I will share how sometime soon). It is so exciting to cook with yoghurt, and it makes recipes more 'dairy like' if you can say that. Soft Whole Wheat Bread Squares


     Why not bake some bread today? These whole wheat bread squares are some of my favorite bread. Even though they are 100% whole wheat and have a rustic, nutty, deep flavor, they are still soft and fluffy (when freshly baked). Fried Eggplant


     Do you like eggplant?. If you do, good for you! If you don't, you need to try these lightly fried eggplant slices. I was given two large eggplants by a friend, and being a person who definitely does not like did not like eggplant, I had no clue what to do with them. I tried baked eggplant puree -- no success. I had to find a way to quickly cook the eggplant, as overcooked, mushy brown eggplant is not exactly my cup of tea. So fried eggplant was born.
